I'm flying from New Jersey to Tokyo, Japan and spending a few days there then I'm flying from Tokyo, Japan to Hong Kong, China, spending a few days there, flying to Bejing, China, spending a few days there and then coming back to the USA.

Are the airlines in China and Japan any different from the USA's? If so, what are the differences?

It really depends on the airline that you are flying. Japan also has discount airlines such as Skymark and Air Do. Japan Airlines and All Nippon Airways are more well known since both airlines fly internationally. China has a lot of different airlines as well and it depends on what airline you fly. If you fly Cathay Pacific from Hong Kong to Beijing, you’ll get really good service. They’re the 2009 best rated airline. As for aircraft flown, both countries will use either Boeing, Airbus, Bombardier or Embraer aircraft. You can go to http://www.seatguru.com to see if there are any major differences in terms of seat width and seat pitch between airlines.

Answer:
Asian airlines are usually much better than US airlines. Airlines like Cathay Pacific and JAL are known for their excellent in flight service and professional employee's. They're usually more pricey to fly with than state American Airlines or United, but the cost is worth it in my view, especially if it's a long flight. Fly with Cathay Pacific if possible.
