Oh Dear… I am so sorry to hear that but what you’re going to do is very noble. Tell me what she likes; good dining, peaceful places, historical sight seeing, crowded or rather calm environments etc.so we all can come up with the best place for her. Also budget info will be helpful
You’ll have to bear in mind that Istanbul will be cold, it is not a very hygienic place since it is a massive metropolitan and I am sure she’s under heavy medication which some of them makes her weak and weakens her immune system. Make sure to find a place close to a good hospital and take all her health reports, info, lab results with you.
By the way, It might sound rather harsh but you don't have the luxury to feel like a wreckage. You’ve to be strong and put a smile on our face at all times; whether it is fake. or not. Keep your chin up. I’m sure you can do it.

I was going to suggest something material,like taking her shopping or something,but if she has cancer ,im positive she will be seeking something more meaningful than shoes or a necklace.
Try to book a dinner at night on the shores of the Bosphorus,and have a long talk with her,im sure she would appreciate it.
