Considering your interests, central Mexico would be best. Central Mexico has a mild climate do to the high altitudes, but Might is the hottest month of the year when even the central highlands are uncomfortable for many people.

I could suggest an itinerary, if I had an idea of how much time you have.

Some place to research are Zacatecas, Querétaro, San Miguel de Allende, Guanjauato, Morelia, Pátzcuaro, Puebla, Oaxaca and Mexico City.

There are lots of others.

Querétaro, San Miguel de Allende, and Guanjauato work nicely into an itinerary because they’re close to each other.

Morelia and Pátzcuaro are only an hour apart.

Busing is a great wy to get around.
