Marriott has a 'Vacation Club' just outside Marbella that’s great for families. You can get a 1, 2, or 3 -bedroom suite with a full kitchen and great balconies. All balconies face the ocean. The weather is great year-round. It is about an hour from the Malaga airport. You can take days trips to Ronda (Bull Fighting museum is fun-about an hour away), Seville (great history and really cute-about an hour and a half away) or Granada (the Alhambra is very interesting and has beautiful grounds-3 hours away but worth it). Marbella is 3 minutes or so away. There are several cute restaurants and shops but beware of the car you get-parking is hard especially in a certain underground parking garage that is very hard to get out of. The hotel has a great outdoor pool, complete with a bridge and beach-style entrance. It also has an indoor family pool and an indoor adults-only pool. It has several Jacuzzis. The Chill Bar is a great place to have lunch outdoors and watch the kids play in the pool. El Med restaurant has great food for dinner, although the breakfast leaves a little to be desired. The MarketPlace has lots of groceries and there is an Open Cor nearby if what you want isn't at the MarketPlace. You can rent movies from the MarketPlace. There’s excellent tennis at the neighbouring Don Carlos resort. I highly suggest this place.

i would go in the summer, and find out when the fiestas are on because they are great for kids, the music, the fairgrounds, the markets. There are usually shows you can see in the open air as well that are free. The north of spain is beautiful, it is good for the children and for you as well. Try Oviedo, pontevedra or lugo. Nerja on the Costa Del Sol. It is an hours drive east of Málaga airport. It is a quaint Spanish town by the sea. It has lovely cove like beaches which are very safe. The whole area is stunning.
Spain isn't expensive as someone has mentioned. The exchange rate may not be good, but so long as you don't overspend, you'll have a great holiday here.
I'm fortunate, I live close to Nerja.
